CDU Palmerston Campus
Saturday 8 December
David Taylor and Oliver Budack put together some fabulous ideas for the Christmas table. We joined them at CDU to prepare a small feast in the kitchen and then retired to the dining room for lunch with matched wines.
The class participants and chef prepared the following dishes:
Green paw paw rice paper rolls with dipping sauce
Local coconut tempura prawns with Hoianese chilli marmalade
Vodka laced rosella sorbet
Local reef fish fillets with lemongrass and ginger wrapped in banana leaves, char grilled
Carpaccio of beef with local limes, capers and parmesan, drizzled with Australian extra virgin olive oil
Seasonal vegetables: snake beans, sweet potato .
Warm chocolate pudding with fresh mango icecream
Price included all food, wines and beverages, and instruction.

Crab and Rosé

White table clothes and the sand between your toes. Jimmy and our favourite Hanuman Chef Ali arriving at the beach with gas burners, huge cauldrons and bountiful mud crabs.
The crab is served simply but with tantalising flavours. For those who haven't delighted in the experience before, this is definitely a "hands on" evening!

Darwin Festival Dinner with Jimmy Shu
Another wonderful dinner under the stars! Jimmy wowed us with Beef Cheeks, Crab Meat with Sea Urchin and Chicken Ban Ban.

Slow Tapas at Moorish Cafe
A tapas of some 21 dishes brimming with our local seafood, meats, fruit and vegetables. A fabulous evening with the team at Moorish really coming to the party to showcase our local produce.

Tandoori and Curry Cooking Class
Saturday 3rd March at CDU Training kitchen in Palmerston
CDU Master Chef and Lecturer Bharat Desai set the scene with an Indian trivia quiz which gave us a sense of history of Indian cuisine and culture. He then guided us through the preparation of 6 dishes. The tandoor oven was used to produce lamb shish-kebabs with a mint and coriander chutney, tandoori chicken and the most wonderful garlic naan bread. A prawn curry, beef vindaloo, potato curry, a tandoori gobi and rice were also produced.
The feast was accompanied by icy beer or wine in the Karawa Restaurant overlooking the lake. An unforgettable experience thanks to the fabulous effort and enthusiasm of Bharat and the constantly relied upon organisational skills of David Taylor.
